Have you ever had one of those days where you wanted something to snack on but just didn’t know exactly what you wanted..so you open every cabinet in the kitchen searching for that perfect thing...well for me Sunday was that day. I attacked the cabinets & fridge several times throughout the day (cause you know the “something” could magically appear the 2nd or 5th time) while I wasn’ sure what I was looking for I was pretty sure that I came up empty. Defeated I sat on the couch and used Jedi mind tricks to pretend there wasn't a growing hole in my soul…a lil dramatic, but, hey I’m entitled. A trip to Home Goods on Monday led to the light at end of the tunnel. I found everything bagel mix and remembered the @smittenkitchen flatbread with honey and thyme recipe that I bookmarked a while ago. Viola! I found the “something”. I used the recipe’s basics and made everything bagel flatbread. These are GREAT! Although I’m thinking that I rolled mine thinner that she did, but, I love how light and crispy they are..so the choice is yours roll it out thin or keep it a little thicker for a chewier end result….but make them definitely make them. Super easy recipe less than 10 ingredients and you can customize to your taste…I plan on making them again with honey & thyme..and maybe a lil thicker will let you guys know how it turns out.
